Hello and welcome to the Vegan Hippie-Chick website!
I'm Karen Rousseau (owner of Vegan Hippie-Chick) a Vegan mom, environmental activist and lover of nourishing plant/based food. I spend much of my time preparing new healthy raw vegan recipes for my family, friends and community. Living on Vancouver Island in beautiful British Columbia has given me a great appreciation and understanding of this awesome planet we live on and all of its creatures.
Mother Earth connects us all whether we choose to see that or not. It's important for future generations that we respect that and take care of her.
I became Vegan in 2011, shortly after my daughters 3rd birthday when I decided it was time to get back in shape, rid myself of a few digestive problems I was having and get completely off of any medications I was taking. I want to be around for her for many many years to come. I have a lot of great family & friends who supported me in my decision and some not so supportive but those ones make me even more determined to stick with it!
I've seen so many people around me start to develop some major health problems, cancers being the biggest ones. Too many of my friends suffering at too young of an age in my opinion ~I’m in my 40′s but shhhh don’t tell anyone. A plant-based diet has worked for me, I whole heartedly believe this is the path to great health and a healthier environment.
Another factor that helped me to make the switch to healthier eating was of course my love of animals. I support many people and organizations that are a voice for those who have no voice. Once again, we are all connected if there are major species extinctions this will affect the earth and us.
Cooking is a big part of my life also, so switching to a Vegan diet has been a fun learning experience. My vegan journey continues to evolve and teach me to see that the world is filled with many great people with wonderful insights to share. Together we can make a difference.
