My daughter and I LOVE blueberries!! So I was thrilled when she suggested we get some today. I ate so many blueberries as a kid, they were my favourite, so it’s nice to see my little one following in my footsteps. My mom and grandmother used to go blueberry picking in the summer and fill up our freezer with buckets of them. We would make pies for Sunday dinner dessert. My dear Ukranian grandmother even made blueberry pedaheh (or perogies) a variation on the potato/cheese version but equally as yummy!
Organic blueberries are high in nutritional value. They have antioxidant properties.. benefit the nervous system and promote brain health. Another neat thing about blueberries is they maintain their antioxidant power even after freezing so you can eat them all year round. Studies have also shown their ability to regulate blood sugar levels like a lot if other berries.. so good for diabetics.
Now, what to make with these lovely, healthy and rather expensive berries.. Hmm something light and fresh.. a mousse sounds good to me!
Top them with a sprinkle of coconut flakes or fresh berries and serve! It’s a very light but creamy dessert. A great one for the kids and they can help ya make it too :-) I hope you will try out this simple recipe and post your comments below.
