Sometimes getting creative with lunches can be a tricky thing.. that’s why I love being able to veganize my old school favourites. Tuna sandwiches were one of my top things to eat before I was vegan but now that I know what I know I couldn’t bare killing a fish and eating it. Not to mention all of the sharks and sea life that get caught up in the nets and drown. Then there’s the mercury poisoning...
That’s why this sandwich is awesome! The texture, the flavour, the nutrient density, layers and layers of goodness. The pita bread you can purchase from your local grocery store (read your label make sure it’s vegan) and I’ll give you the recipe for my tuna-less mixture and and all you do is add your favourite vegan mayo too with greens, tomato slices, cucumber and voila! A delicious vegan lunch.
Vegan Tuna-less Sandwich in a Pita Pocket
2 cups raw unsalted sunflower seeds (soaked over night and drained)
1/2 cup fresh celery
2 tbsp. fresh dill
1/2 sheet of nori (tipped into tiny bits)
1-2 tsps. beet grated
juice of 1/2 a lemon
1/4 tsp. sea salt
1/4 cup vegan mayo (your favourite)
1. Add all ingredients except the mayo to your food processor and pulse until roughly combined to resemble tuna salad.
2. Scoop “tuna” into a mixing bowl.
3. Add in vegan mayo and mix to combine.
4. Slice a pita in half and fill with greens, tomato slices, cucumber slices and a big dollop of the tuna-less mix.
And this is my favourite childhood sandwich veganized! If you don’t care for pita bread then sub with your favourite slices of bread, buns or toss it on a salad... ooh that would be delicious too. Please comment below and let me know what you think. Enjoy! Love you guys, Karen 🌱
