I made Almond Milk for the first time this weekend and wow.. it is officially my new favourite drink!! So rich and creamy.. it tastes great by itself, in cereal, even in tea. Home-made almond milk does NOT compare to the commercially-made varieties you buy at the supermarket. You know the ones.. packaged in tetrapacks and cartons. Yah, sorry, but not the same freshness, flavour, texture or even the smell.
So here’s the thing.. it was so simple and inexpensive to make I’ve been questioning myself ever since.. ‘Why haven’t I made this before?’ Probably because the dairy industry had convinced me that I would die and not have healthy bones or skin if I didn’t drink cows milk… I now know that is so not true!!
Almond milk is one of the healthiest milk substitutes around. It is rich in vitamins and nutrients like calcium, protein, omega 3 fatty acids, manganese, selenium, magnesium, potassium, zinc, iron, fiber, phosphorous and vitamin D. There are many milk substitutes that are far better for you than cows milk such as hemp, coconut and nut milks. Unlike cows milk, almond milk and these other substitutes are free of lactose and gluten. Best of all they are RAW and VEGAN no cooking out all the nutrients and re-adding them artificially
It’s so simple to make, all you need is a high speed blender, a nut milk bag or fine strainer, some raw organic almonds and water.. that’s it! Well that and a glass jar with a lid to store your milk in. It will keep for about 5 days in an airtight container in the fridge. I put mine in a large mason jar.
Makes: 1 litre
1 c. raw almonds (with skin on)
4 c. water
1 vanilla beans scraped (optional)
1) add almonds, vanilla and water to your high speed blender.. blend for a few minutes until nuts are almost dissolved and your left with a white liquid with little bits of undissolved skin
2) then strain the liquid with a nut milk bag or fine strainer to remove the brown skin bits and almond pulp
3) pour the creamy frothy liquid into a large glass mason jar, tighten the lid on it and store it in the fridge for up to 5 days.. shake it up before serving
This milk is amazingly delicious and easy on the tummy. Drink it every day and it will literally make your skin glow… I guarantee it!!
