This is a breakfast worth waking up for. Picture it.. you've slept in on Sunday and slowly wake up with the sun shining through your window and a tray of this is brought in for you. Ahhhh the life of luxury. A great afternoon snack too. The kids will love this!!
2 c. fresh organic blueberries
1 Tbsp. coconut nectar or maple syrup
1 tsp. pure vanilla extract
2 Tbsp. ground chia seeds
1) in saucepan on the stovetop cook blueberries, chia, vanilla and coconut nectar on medium heat until it breaks down and thickens around 15 min.
2) remove from heat and spoon mixture into mason jar, put a lid on it and refrigerate.. keeps for a few weeks
This delightful jam is easy and keeps for a few weeks in the fridge. It's lovely on a vegan croissant with cashew cream cheeze too.
