I’ve created a couscous that is just a wee bit healthier than the traditional semolina wheat variety.. but it tastes and has the same texture. Cauliflower is versatile when it comes to re-creating rice and pasta dishes.. I just love it!
This salad is the perfect comfort food for when you just don’t feel like cooking. The cucumber and cilantro make it fresh and flavourful. I always make a big batch so there are leftovers for lunches.. it keeps for a few days in the fridge.
The ingredients in this yummy salad are such that you can easily substitute with your favourite veggies and seaonings. Feel free to switch it up a little every time you make it. But for me, I love it just like this…
This salad is so yummy. For me its a great comfort food on those days when you are extra hungry. I love eating it for dinner but then the leftovers are a fantastic lunch idea during the week. Its a great replacement for wheat.. I love that too!! Try it you’ll love it.
