Ooh the smell of the ingredients in this soup remind me of summertime in the garden. Nothing like using fresh garden herbs in your cooking. I love this soup so much I could eat it every day :-) So simple to make too.. all you will need is a few organic ingredients and a blender. So get rid of all the canned GMO chemically laden soups now, you've got no more excuses!!
Tomatoes have huge health benefits.. they have large amounts of the phytonutrient, lycopene, which wards off many forms of cancers such as prostrate, breast, pancreatic, colorectal, lung and others. Especially true when you eat them with fat-rich foods such as avocado, cold-pressed olive oil and nuts. Tomatoes also promote bone and heart health. This soup has lots of tomatoes and cashews so it's a good healthy option to add to your weekly meal plans.
CREAMY TOMATO-BASIL SOUP
Keep in mind that heating is purely optional as this soup is lovely raw.. the power of the blender will bring it to room temp and you can also add slightly warm water to it. If you have any leftovers you can store them in the fridge for up to 5 days or in the freezer in an airtight container for a few months.
