It's fall time again, for me that means making lots of different kinds of soups in the vitamix. I love the comforting feeling of a nice warm bowl of soup on a lazy Sunday. Brings a smile to everyones face and makes a house feel like a home!
I picked up some yams at the market and I already had a large head of cauliflower in the fridge so I chopped up the veggies, seasoned them with curry and olive oil and threw them on a baking sheet and into the oven they went. Wow the smells are so amazing when you do something as simple as roast some veggies in the oven. It makes everyone excited to eat.. a great way to get your kids to eat real food.
This recipe is simple.. I find soups are best when they're simple. Just a few fresh ingredients and you will have a dynamic incredibly flavourful soup every time!! I always have lots of veggies in the fridge or cupboard that way I'm good to go as soon as I get home from work. I just have to decide what combo I will create. Making a few soups on the weekend and storing them in tubs in the fridge is a good idea. This way you have soups ready to go all week for dinners.
Yum!!! This is a creamy and very tasty soup. It keeps well in the fridge covered for around 5 days.. just heat, give it a whisk and serve. I often make this soup as a starter for my holiday meals. It's a real show stopper!
