Since hummus is so yummy I thought I would try out a different flavour. Roasted red peppers seem to be a favourite for a lot of people so I figured I would give it a try. Here is my recipe.
ROASTED RED PEPPER HUMMUS:
2 c. cooked chickpeas
1/2 c. roasted red bell pepper
1 Tbsp. tahini
1 clove garlic
1 Tbsp. coconut oil
Juice of 1/2 lime or lemon
1/4 tsp. pink salt
1 tsp. paprika
1/4 tsp. cayenne pepper
1) Add all ingredients in your food processor and blend until creamy smooth.
Serve with your favourite dehydrated crackers as a dip or as a spread on a sandwich in place of mayo. Yum!!
Did you know that red bell peppers contain the phytonutrient, lycopene, which is an anti-cancer nutrient? They are also a great source of vitamin C. Garlic is also something you should try to eat everyday to boost up your immune system.
This dip is beautiful as well as bring tasty. Give it a try at your next party.. It's sure to be a big hit!! And nobody but you will know they are snacking healthy.
