My favourite soup as a kid was Cream of Mushroom.. but it was out of a can and filled with bad stuff. It was what we ate back then.. it was quick, cheap, available and easy to cook. So we ate it.. well I’m here to show you how quick and easy this soup is to make from scratch with super healthy fresh ingredients.
I make a huge batch in the Vitamix.. eat a bowl, keep a storage tub in the fridge for the next few days and a large container in the freezer for later. I usually have a bunch of soups in the freezer (I eat it a lot) ready at a moments notice.. just have to thaw and heat them up. Simple just like opening a can of soup but much more flavour and better for you!
This soup works well as a savoury gravy also. Its very flavourful and smells good too! Store the extra in your fridge for a few days or in your freezer in an airtight container for 4-6 weeks.
