My very first job as a teenager was at an ice cream shop in Northwestern Ontario. My best friend and I spent an entire summer making all sorts of tasty creations.. those were some of the best times of my life! There's something wonderful about ice cream.. it's a cool treat on a hot day and a great snack to take your troubles away. The only problem is it's usually made with heavy cream, oodles of sugar and chemicals galore! But I did some research and experimenting in my kitchen and came up with a version that's very simple and good for you too.
This version is simple just 3 ingredients: frozen banana chunks, frozen berries and chilled coconut milk... that's it!! You need a high powered blender like a Vitamix or Blendtec or a food processor. And yes, you can switch it up for dozens of flavour combinations. Matcha or Mango or ooh lavender would be lovely to try. Be creative!
Frozen bananas are amazingly similar to the texture of dairy ice cream. Make sure they are ripe and peeled before freezing them. You could substitute the blackberries for strawberries, blueberries, mangos, matcha, vanilla bean, apples and cinnamon, lavender, oranges the possibilities are endless!!
