Just because you're vegan doesn't mean you can't have your bacon too! I love this recipe it's so simple but so good. I hope you will try it and make a big batch!!
Coconut is such a versatile food.. it transforms very well. Coconut is great for heart health, it's high in dietary fibre, has a low glycemic index and even aids in digestion.. not to mention it helps with those sweet cravings. Yep, it's one of those super foods that you need in your daily diet.
I make this bacon and use it in my Vegan Cheeze Ball recipe, my Dehydrated BLT sandwich and even to toss on a salad for some salty flavour and crunch.
2 c. organic unsweetened coconut flakes (not shreds)
3 Tbsp. organic tamari (wheat & soy free)
2 Tbsp. maple syrup
1) toss all ingredients in a bowl until the coconut flakes are coated completely
2) spread out evenly on a non stick baking sheet
3) bake at 350 degrees for 12-15 min. use a spatula to flip half way through.. brown it but don't burn it
Some recipes call for liquid smoke but I couldn't find any so I left it out and to be honest this tastes like bacon. If you want add a bit of liquid smoke but I don't think you need to.
