A chocolate lovers dream! This is my favourite dessert.. yes I am a major choco-holic. It's such a simple recipe and keeps in the fridge for a few days too. There is nothing in this dessert that you have to feel guilty about either. It's amazingly good for you! 2 of the main ingredients are: chia seeds and cacao powder both of which are ancient superfoods. It's a raw dessert too sweetened with the incredible coconut nectar, my personal favourite sweetener.
Here is the recipe...
2 c. organic coconut cream
1/4 c. raw cacao powder
1/4 c. coconut nectar
1/2 vanilla bean (scraped)
1/4 c. chia seeds (ground)
1) add all ingredients to your food processor
2) blend on high until all ingredients are completely incorporated and creamy smooth
3) spoon mixture into 4 ramekins
4) sprinkle tops with cacao nibs or almonds, cover and refrigerate until firm 2 hours or longer.. It keeps for a few days in the fridge
I love love love this dessert. Always a big hit at a dinner party too. Kids will love this one!! Try it I hope you like it!!
