This is the ultimate comfort food and it's Vegan too!! Perfect for your next picnic or day at the beach.. there's no chicken or eggs in this sandwich so you don't have to worry about salmonella poisoning.. yay!! Feel free to substitute the whole grain bread for dehydrated bread or lettuce leaves. It would even be good all on it's own as a salad.
I’ll be eating this sandwich a few more times this week. Store the extra chick-n’ salad in an airtight container in your fridge. I hope you love this recipe as much as I do!!
